I've adapted a recipe from epicurious over the years and there are a few important things to note that make this turkey stock recipe top-notch. This adds fantastic depth of flavor for a very rich, golden stock, The original recipe calls for chopping up the wings with a meat cleaver, but I don't even do that.

To get started with this recipe, we must prepare a few ingredients. You can cook turkey stock using 11 ingredients and 9 steps. Here is how you cook it.

The ingredients needed to make Turkey Stock:
  1. Make ready 6 lb turkey parts, I use wings and legs
  2. Take 2 large onions, peeled and halfed
  3. Make ready 4 celery stalks with leaves, cut into 1/2 inch pieces
  4. Prepare 4 carrots, cut into 1/2 inch pieces
  5. Get 6 whole garlic cloves
  6. Take 10 whole blacke peppercorns or 1/2 teaspoon ground black pepper
  7. Get 1/2 tsp dryed thyme leaves
  8. Make ready 1 tsp hot sauce, such as Franks,red hot
  9. Prepare 1 tsp seasoned rice vinegar
  10. Get 8 cup sodium free chicken broth, or low sodium
  11. Get salt and pepper for seasoning turkey

When you're making a turkey, making stock with the bones is the logical next step. This recipe, from the Los Angeles chef Suzanne Goin, has the usual aromatics — carrots, celery, onions — plus a. Turkey stock is a made simmering the turkey carcass or bones and water with the classic trio of vegetables: carrots, celery and onion. It is simmered for multiple hours creating a rich, robust flavored liquid.

Steps to make Turkey Stock:
  1. Spray a large roasting pan with non stick spray. Preheat oven to 450.

  4. Add remaining chicken broth.
  5. Simmer, skimming off any foam that rises to the top for the first 30 minutes. Continue to simmer on a low simmer 2 1/2 to 3 hours. Do not cover , you want the liquid to reduce some.
  6. Strain out all solids into a clean pan.
  7. Cool to room temperature, cover and chill overnight. A light colored fat layer will form on surface of stock. Remove it and discard. It will lift right off when cold.
  8. The stock is now ready to use or freeze.
  9. Note This stock is made without added salt except for seasoning the turkey on purpose. It can be used in any dish or soup and then salt to taste when using.

It's okay if you don't, you will still get a great turkey stock from just the carcass.
